First of all, there are so many "meals for under 500 calories" articles out there, but they fail to take in a couple of things to account.
Most of us will not buy "special" ingredients for just a meal or two.
So based on my own kitchen , which admittedly might be slightly more eclectic than some,yet I don't feel its too far off the beaten path.
Please spend some time on the "My Pantry" page too to see a list of ingredients and pantry staples I always keep on hand.
4 oz Steamed Fish fillet- any type- whichever you prefer 110 cal.
6 oz steamed brown rice -162 cal.
1 c steamed broccoli 31 cal.
1/2 c salsa- 35 cal
1/2 avocado chopped 130 cal(appx)
1 Tsp minced garlic 5 cal
pepper to taste
473 TOTAL calories
using a rice steamer , prepare the rice and broccoli in the steamer- when nearly finished- about 7 minutes left, add the fish fillet on top sprinkled with pepper and garlic
when steamer shuts off, let it rest for 5- 6 minutes, cut and chop your 1/2 of avocado and mix in with the salsa serve rice with broccoli and fish fillet on top covering with the salsa mixture.
